Surprise Carrot Cake

Ingredients

  • 1 8 oz pkg cream cheese softened
  • 14 c sugar
  • 1 egg beaten
  • 2 c flour
  • 1 34 c sugar
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 c oil
  • 3 eggs beaten
  • 3 c shredded carrot
  • 12 c chopped nuts

Directions

  1. Combine cream cheese sugar and 1 beaten egg mixing well until blended
  2. Set aside
  3. Combine dry ingredients
  4. Add combined oil and remaining 3 eggs mixing until moistened
  5. Fold in carrots and nuts
  6. Reserve 2 cups batter
  7. Pour remaining batter into greased and floured 9-inch Bundt pan
  8. Pour cream cheese mixture spreading to cover
  9. Top with batter
  10. Bake at 350 for 55 minutes or until wooden pick inserted in center comes out clean
  11. Cool for 10 minutes
  12. Remove from pan sprinkle with powdered sugar
