Surprise Salmon Cakes

Ingredients
- 1 1 lb can salmon
- 5 slices day old bread shredded
- 1 small chopped onion
- 2 Tbsp chopped parsley
- 1 Tbsp lemon juice
- 14 c milk
- 14 lb American Cheddar cheese
- 2 eggs
Directions
- Drain liquid from salmon
- Into mixing bowl add flaked salmon slightly beaten eggs and remaining ingredients except cheese
- Mix Shape into cakes around 14-inch cube of cheese
- Brown cakes in small amount of shortening
