Ingredients

  • 10 to 12 oz linguine cooked
  • 3 Tbsp oil
  • 6 c shredded zucchini
  • 3 large cloves garlic
  • 14 c parsley chopped
  • 14 c margarine
  • 1 c half and half
  • 12 c grated Romano cheese
  • 14 c grated Parmesan cheese
  • 12 tsp oregano

Directions

  1. Stir-fry zucchini and garlic in oil for 3 to 4 minutes until tender-crisp
  2. Reduce to low heat
  3. Add parsley margarine and half and half
  4. Cook until butter melts
  5. Add cheeses linguine and oregano
  6. Serve
