SusanS Vegetable Toss

Ingredients
- 10 to 12 oz linguine cooked
- 3 Tbsp oil
- 6 c shredded zucchini
- 3 large cloves garlic
- 14 c parsley chopped
- 14 c margarine
- 1 c half and half
- 12 c grated Romano cheese
- 14 c grated Parmesan cheese
- 12 tsp oregano
Directions
- Stir-fry zucchini and garlic in oil for 3 to 4 minutes until tender-crisp
- Reduce to low heat
- Add parsley margarine and half and half
- Cook until butter melts
- Add cheeses linguine and oregano
- Serve
