Sweet And Sour Carrots

Ingredients

  • 1 lb carrots sliced diagonally
  • 1 medium green pepper cut in 1-inch squares
  • 1 8 oz can pineapple chunks
  • 13 c sugar
  • 1 Tbsp cornstarch
  • 12 tsp salt
  • 2 Tbsp vinegar
  • 2 tsp soy sauce

Directions

  1. Cook carrots in slightly salted water for 15 minutes
  2. Add pepper and cook for 3 minutes more drain
  3. Drain pineapple and save juice
  4. Add water to juice to make 13 cup
  5. Combine sugar cornstarch salt liquid vinegar and soy sauce
  6. Cook and stir until bubbly
  7. Add vegetables and pineapple
  8. Heat through Serves 6
