Sweet And Sour Carrots

Ingredients

  • 1 lb carrots peeled and cut diagonally
  • 1 medium green pepper seeded and cut in strips
  • 1 8 oz can pineapple chunks save juice
  • 13 c sugar
  • 2 tsp cornstarch
  • 12 tsp salt
  • 2 Tbsp vinegar
  • 2 tsp soy sauce

Directions

  1. Cook carrots covered in a small amount of water just until tender about 15 minutes
  2. Add green pepper cook 3 minutes longer
  3. Drain
  4. Drain pineapple save juice
  5. Add water if necessary to make 13 cup of liquid
  6. Combine sugar cornstarch and salt in saucepan stir in pineapple liquid vinegar and soy sauce
  7. Cook until thick stirring constantly
  8. Add sauce and pineapple to vegetables heat
  9. Serve hot or cold
