Sweet And Sour Pork Kabobs

Ingredients

  • 2 medium carrots 1-inch pieces
  • 14 c red wine vinegar
  • 1 Tbsp soy sauce
  • 1 tsp sugar
  • 12 oz boneless pork cut into 1-inch pieces
  • 1 small sweet red pepper cut into 1-inch pieces
  • 1 8 oz can pineapple slices
  • 1 Tbsp cooking oil
  • 1 12 tsp cornstarch
  • 1 clove garlic minced
  • 1 small green pepper cut into 1-inch pieces

Directions

  1. In a saucepan cook carrots covered in a small amount of boiling water for 8 minutes drain well
  2. Drain pineapple reserving juice
  3. Cut pineapple slices into quarters set aside
