Sweet Pickled Beets
Ingredients
- 1 10 qt bucket beets 1-inch tops and roots left on to cook
- 6 c vinegar
- 3 c sugar
- 3 Tbsp mixed pickling spices tied in a cloth bag
Directions
- Boil the beets until tender about 2 hours
- Remove them from heat and peel
- Slice 14-inch slices
- Put the vinegar sugar and spice bag in a kettle and boil for a few minutes or until sugar is well dissolved
- Add the beets to the syrup and bring it back to the boiling point
- Remove from heat
- Pack while hot in sterilized jars and seal
- Makes about 8 or 9 pints
