Sweet Potato And Banana Casserole

Ingredients

  • 6 large sweet potatoes peeled
  • 4 bananas
  • 2 Tbsp fresh lemon juice
  • 12 c light brown sugar packed
  • 1 tsp ground nutmeg
  • 12 tsp salt
  • 14 c dark rum
  • 4 Tbsp unsalted butter melted

Directions

  1. Preheat oven to 375
  2. Peel potatoes cut crosswise into 1-inch slices
  3. Place in pot cover with water and bring to a boil
  4. Reduce heat slightly cook for 15 to 20 minutes or until tender
  5. Drain
  6. Peel bananas cut in half once lengthwise and cut twice crosswise
  7. Toss with lemon juice
  8. Place cooked potatoes and bananas in a shallow roasting pan
  9. Sprinkle with brown sugar nutmeg and salt
  10. Drizzle with rum and melted butter
  11. Cover and bake for 30 minutes
  12. Remove from oven and puree potatoes bananas and liquid in a food processor until fairly smooth leaving a bit of texture
  13. Pour into an ovenproof casserole and cover with aluminum foil
  14. Bake in a 350 oven for 15 to 20 minutes
  15. Serves 10 to 12
