Sweet Potato And Banana Casserole
Ingredients
- 6 large sweet potatoes peeled
- 4 bananas
- 2 Tbsp fresh lemon juice
- 12 c light brown sugar packed
- 1 tsp ground nutmeg
- 12 tsp salt
- 14 c dark rum
- 4 Tbsp unsalted butter melted
Directions
- Preheat oven to 375
- Peel potatoes cut crosswise into 1-inch slices
- Place in pot cover with water and bring to a boil
- Reduce heat slightly cook for 15 to 20 minutes or until tender
- Drain
- Peel bananas cut in half once lengthwise and cut twice crosswise
- Toss with lemon juice
- Place cooked potatoes and bananas in a shallow roasting pan
- Sprinkle with brown sugar nutmeg and salt
- Drizzle with rum and melted butter
- Cover and bake for 30 minutes
- Remove from oven and puree potatoes bananas and liquid in a food processor until fairly smooth leaving a bit of texture
- Pour into an ovenproof casserole and cover with aluminum foil
- Bake in a 350 oven for 15 to 20 minutes
- Serves 10 to 12
