Sweet Potato Biscuits

Ingredients

  • 4 c all-purpose flour
  • 2 Tbsp baking powder
  • 2 tsp salt
  • 1 c butter or margarine
  • 1 c mashed sweet potato cooked
  • 12 c sour cream fat-free may be used
  • 12 c buttermilk fat-free may be used

Directions

  1. Combine first 3 ingredients
  2. Cut in butter until crumbly Stir together sweet potato sour cream and buttermilk add to dry ingredients stirring just until moistened
  3. Turn dough out onto a lightly floured surface and knead 3 or 4 times
  4. Pat or roll to 12 inch thickness
  5. Cut dough with a 3 inch round cutter and place biscuits on a lightly greased baking sheet
  6. Bake at 400 for 15 to 20 minutes or until golden brown
  7. Makes 14 biscuits
