Sweet Potato Biscuits

Ingredients
- 4 c all-purpose flour
- 2 Tbsp baking powder
- 2 tsp salt
- 1 c butter or margarine
- 1 c mashed sweet potato cooked
- 12 c sour cream fat-free may be used
- 12 c buttermilk fat-free may be used
Directions
- Combine first 3 ingredients
- Cut in butter until crumbly Stir together sweet potato sour cream and buttermilk add to dry ingredients stirring just until moistened
- Turn dough out onto a lightly floured surface and knead 3 or 4 times
- Pat or roll to 12 inch thickness
- Cut dough with a 3 inch round cutter and place biscuits on a lightly greased baking sheet
- Bake at 400 for 15 to 20 minutes or until golden brown
- Makes 14 biscuits
