Sweet Potato Bonbons
Ingredients
- 3 lb sweet potatoes Taylor canned
- 14 c butter
- 12 c brown sugar
- 1 tsp salt
- 12 tsp grated orange rind
- marshmallows
- melted butter
- 4 c crushed corn flakes
- pecan halves
Directions
- Beat sweet potatoes and add 14 cup butter brown sugar salt and grated orange rind
- Let cool if using fresh potatoes
- Divide into individual servings
- Press potato mixture around 12 marshmallow
- Shape into ovals
- Coat each with melted butter Roll in crushed corn flakes
- Top with pecan half and place on greased cookie sheet
- Nice to freeze ahead
- Bake at 450 for 7 to 8 minutes
