Sweet Potato Bread

Ingredients

• 1 c oil
• 4 eggs
• 23 c water
• 2 c mashed sweet potatoes
• 3 12 c flour
• 3 c sugar
• 1 12 tsp salt
• 1 tsp soda
• 2 tsp baking powder
• 1 tsp cinnamon
• 1 tsp nutmeg
• 1 tsp vanilla
• 34 c raisins or nuts optional

Directions

1. Sift dry ingredients into a large bowl
2. Combine oil eggs water and sweet potatoes together
3. Add to dry ingredients
4. Mix thoroughly pour into 3 greased and floured 9 x 5 x 3-inch loaf pans
5. Bake for 1 hour in 350 oven or until toothpick comes out clean
