Sweet Potato Cake

Ingredients

• 3 c flour
• 2 c sugar
• 2 tsp baking powder
• 1 tsp soda
• 2 tsp cinnamon
• 14 tsp salt
• 1 c chopped pecans
• 1 c cooking oil
• 2 tsp vanilla
• 3 eggs
• 2 c grated raw sweet potatoes
• 1 1 lb can crushed pineapple with juice

Directions

1. Sift dry ingredients and place in mixing bowl
2. Add cooking oil vanilla and can of pineapple
3. Mix well
4. Add eggs mixing well after each addition
5. Add grated sweet potatoes and pecans Stir well
6. Pour in tube pan
7. Bake at 350 for about 1 14 hours Test with toothpick
