Sweet Potato Cake

Ingredients

• 1 tsp salt
• 2 c sweet potatoes cooked and mashed
• 4 eggs
• 2 tsp vanilla
• 1 c raisins
• 1 c chopped nuts
• 1 c coconut
• 1 pkg candied fruit optional

Directions

1. Mix the salt and sweet potatoes well
2. Add eggs one at a time
3. Add
4. vanilla
5. and
6. remaining ingredients
7. Pour into greased tube pan and bake at 300 for 1 12 hours or longer if needed
8. Cool before removing from pan
