Sweet Potato Cake

Ingredients

• 1 c. butter
• 2 c. sugar
• 4 eggs
• 3 c. mashed potatoes
• 1 tsp. vanilla
• 1/2 tsp. nutmeg
• 1 tsp. cinnamon
• 3 c. flour (self-rising)
• 1/2 c. pecans
• 1/2 c. coconut

Directions

1. Cream butter.
2. Pour
3. in sugar slowly.
4. Beat well.
5. Beat in eggs one
6. at a time.
7. Add potatoes and vanilla.
8. Sift flour and spices.
9. Fold
10. into
11. batter.
12. Fold in
13. nuts
14. and coconut. Pour in large tube pan and bake 1 hour at 325° to 350°.
