Sweet Potato Crunch

Ingredients

  • 5 c peeled cubed sweet potatoes 2 lb
  • 1 c unsweetened applesauce
  • 1 egg yolk
  • 1 tsp vanilla
  • 12 tsp ground cinnamon
  • 2 egg whites
  • vegetable cooking spray
  • 12 c firmly packed brown sugar
  • 2 Tbsp flour
  • 1 Tbsp margarine melted

Directions

  1. Cook potatoes until tender about 15 minutes
  2. Cool
  3. In blender process until smooth the potatoes applesauce egg yolk vanilla and spices
  4. Beat egg white until stiff peaks form Gently fold into potato mixture and spoon into 1 12-quart souffle dish coated with cooking spray
  5. Combine brown sugar flour and margarine
  6. Sprinkle over potato mixture
  7. Bake at 350 for 35 minutes or until set
  8. Serve immediately
