Sweet Potato Crunch
Ingredients
- 5 c peeled cubed sweet potatoes 2 lb
- 1 c unsweetened applesauce
- 1 egg yolk
- 1 tsp vanilla
- 12 tsp ground cinnamon
- 2 egg whites
- vegetable cooking spray
- 12 c firmly packed brown sugar
- 2 Tbsp flour
- 1 Tbsp margarine melted
Directions
- Cook potatoes until tender about 15 minutes
- Cool
- In blender process until smooth the potatoes applesauce egg yolk vanilla and spices
- Beat egg white until stiff peaks form Gently fold into potato mixture and spoon into 1 12-quart souffle dish coated with cooking spray
- Combine brown sugar flour and margarine
- Sprinkle over potato mixture
- Bake at 350 for 35 minutes or until set
- Serve immediately
