Sweet Potato Muffins

Ingredients

• 12 c butter
• 1 14 c sugar
• 2 eggs
• 1 14 c canned sweet potatoes mashed
• 1 12 c all-purpose flour
• 2 tsp baking powder
• 14 tsp salt
• 1 tsp cinnamon
• 12 tsp nutmeg
• 14 c chopped nuts
• 14 c raisins chopped
• 1 c milk

Directions

1. Heat oven to 400
2. Grease tins do not use paper liners Cream butter and sugar add eggs
3. Puree sweet potatoes and blend Sift dry ingredients
4. Add nuts and raisins
5. Mix the 2 mixtures alternately with milk
6. Do not overmix
7. Fill tins completely Muffins will not rise very much
8. Bake at 400 for 25 minutes
