Sweet Potato Muffins
Ingredients
- 12 c butter
- 1 14 c sugar
- 2 eggs
- 1 14 c canned sweet potatoes mashed
- 1 12 c all-purpose flour
- 2 tsp baking powder
- 14 tsp salt
- 1 tsp cinnamon
- 12 tsp nutmeg
- 14 c chopped nuts
- 14 c raisins chopped
- 1 c milk
Directions
- Heat oven to 400
- Grease tins do not use paper liners Cream butter and sugar add eggs
- Puree sweet potatoes and blend Sift dry ingredients
- Add nuts and raisins
- Mix the 2 mixtures alternately with milk
- Do not overmix
- Fill tins completely Muffins will not rise very much
- Bake at 400 for 25 minutes
