Sweet Potato Pudding

Ingredients

• 2 lb sweet potatoes cooked and peeled
• 14 c melted butter
• 12 tsp salt
• 6 Tbsp brown sugar
• 1 18 tsp vanilla
• chopped pecans

Directions

1. Combine potatoes butter sugar vanilla and salt
2. Beat until smooth
3. Spoon into lightly greased 2-quart casserole dish Sprinkle with chopped pecans and bake at 350 for 30 minutes
