Sweet Potato Sombreros
Ingredients
- 2 or 3 cooked sweet potatoes or 1 can sweet potatoes 1 lb 2 oz
- 1 egg
- 2 Tbsp margarine
- 12 tsp salt
- 14 to 12 c brown sugar
- 10 slices canned pineapple rings
- dash of nutmeg
Directions
- Mash drained sweet potatoes
- Mix with beaten egg margarine salt brown sugar and nutmeg
- Arrange slices of pineapple in a lightly greased shallow baking pan
- Mound the sweet potato mixture on each slice
- Brush with additional margarine if desired
- Bake at 425 for about 15 minutes
