Sweet Potato Sombreros

Sweet Potato Sombreros

Ingredients

  • 2 or 3 cooked sweet potatoes or 1 can sweet potatoes 1 lb 2 oz
  • 1 egg
  • 2 Tbsp margarine
  • 12 tsp salt
  • 14 to 12 c brown sugar
  • 10 slices canned pineapple rings
  • dash of nutmeg

Directions

  1. Mash drained sweet potatoes
  2. Mix with beaten egg margarine salt brown sugar and nutmeg
  3. Arrange slices of pineapple in a lightly greased shallow baking pan
  4. Mound the sweet potato mixture on each slice
  5. Brush with additional margarine if desired
  6. Bake at 425 for about 15 minutes
