Sweet Potato Souffle
Ingredients
- 1 40 oz can sweet potatoes drained
- 1 tsp grated lemon peel
- 13 c powdered milk or skim milk
- 2 Tbsp all purpose flour
- 34 tsp baking powder
- 1 Tbsp apple juice concentrate
- 14 tsp cinnamon
- pinch of cloves
- 1 tsp vanilla extract
- 1 tsp fresh lemon juice
- 2 egg whites
Directions
- Preheat oven to 325
- Place sweet potatoes in large mixer bowl and beat until smooth
- Add remaining ingredients except egg whites blend until smooth
- Beat egg whites in small mixer bowl with clean beaters at medium speed until stiff but not dry
- Fold into potato mixture
- Pour into 8-inch nonstick baking pan and bake uncovered 50 to 60 minutes until golden and set
- Makes 6 servings
