Sweet Potato Souffle

Ingredients
- 3 lb sweet potatoes peeled cooked and mashed
- 2 eggs
- 34 c brown sugar
- 12 c melted butter
- 1 tsp salt
- 1 tsp cinnamon
- orange juice up to 1 c
- 1 c pecan halves
Directions
- Use electric mixer on medium speed blend in eggs with 14 cup brown sugar and 14 cup melted butter
- Add cinnamon salt and 2 tablespoons orange juice
- Beat until fluffy and moist
- If needed add more orange juice
- Pour into 2-quart casserole cover with pecans
- Sprinkle remaining sugar and butter bake uncovered 20 minutes in oven at 375
