Sweet Potato Souffle

Sweet Potato Souffle

Ingredients

  • 1 40 oz can sweet potatoes drained
  • 1 tsp grated lemon peel
  • 13 c powdered milk or skim milk
  • 2 Tbsp all purpose flour
  • 34 tsp baking powder
  • 1 Tbsp apple juice concentrate
  • 14 tsp cinnamon
  • pinch of cloves
  • 1 tsp vanilla extract
  • 1 tsp fresh lemon juice
  • 2 egg whites

Directions

  1. Preheat oven to 325
  2. Place sweet potatoes in large mixer bowl and beat until smooth
  3. Add remaining ingredients except egg whites blend until smooth
  4. Beat egg whites in small mixer bowl with clean beaters at medium speed until stiff but not dry
  5. Fold into potato mixture
  6. Pour into 8-inch nonstick baking pan and bake uncovered 50 to 60 minutes until golden and set
  7. Makes 6 servings
