Sweet Potato Souffle

Ingredients

  • 3 lb sweet potatoes peeled cooked and mashed
  • 2 eggs
  • 34 c brown sugar
  • 12 c melted butter
  • 1 tsp salt
  • 1 tsp cinnamon
  • orange juice up to 1 c
  • 1 c pecan halves

Directions

  1. Use electric mixer on medium speed blend in eggs with 14 cup brown sugar and 14 cup melted butter
  2. Add cinnamon salt and 2 tablespoons orange juice
  3. Beat until fluffy and moist
  4. If needed add more orange juice
  5. Pour into 2-quart casserole cover with pecans
  6. Sprinkle remaining sugar and butter bake uncovered 20 minutes in oven at 375
