Sweet Potatoes In Apple Cups

Ingredients

• 4 medium sweet potatoes
• 3 Tbsp butter
• 12 tsp salt
• 2 Tbsp sugar
• 4 red-skinned baking apples
• 4 marshmallows

Directions

1. Boil sweet potatoes until tender
2. Peel and mash
3. Add butter salt and sugar to potatoes and blend thoroughly
4. Scoop out inside of apples leaving a margin of about 14-inch all around
5. Fill apples with mashed sweet potatoes
6. Place in a baking dish and bake in a moderate oven at 325 for about 15 minutes until apples are cooked
7. Place marshmallows on top of potato mixture and return to oven to allow marshmallows to brown
8. Serves 4
