Swiss Onion Soup

Ingredients
- 2 lb onions
- 12 c butter
- 1 clove garlic
- salt and pepper to taste
- 2 qt water or 2 qt milk or half and half
- 12 bouillon cubes beef
- 3 oz Swiss cheese
- 6 Tbsp flour
Directions
- Slice onions thinly
- Slowly saute in butter with crushed garlic until golden
- Add flour and cook until golden
- Stir to prevent scorching
- Beat in water or milk salt and pepper and bouillon cubes and simmer until onions are tender about 15 minutes
- Cut cheese into thin slices and place in soup tureen or individual bowls
- Pour hot soup on top
- I also toast bread and place on top of soup
- Cover and allow to stand 5 or 6 minutes before serving
- May be put in blender to smooth
