Swiss Potato Pancakes

Ingredients

  • 4 c shredded potatoes
  • 12 c diced Swiss cheese
  • 12 tsp salt
  • 3 oz cream cheese
  • 18 tsp pepper
  • 2 eggs
  • dash of red pepper
  • 2 Tbsp flour
  • 3 Tbsp oleo
  • 3 Tbsp salad oil
  • 2 Tbsp grated onions
  • 4 c unsifted flour all-purpose
  • 1 Tbsp sugar can omit
  • 2 tsp salt
  • 1 34 c vegetable shortening
  • 1 Tbsp vinegar
  • 1 large egg
  • 12 c water

Directions

  1. Measure flour sugar and salt into large bowl
  2. Mix well with fork
  3. Add shortening mix with fork until crumbly
  4. In small bowl beat together egg water and vinegar using fork to blend well Combine dry ingredients with liquid
  5. Divide dough into 5 equal portions and shape into round flattened patties ready for rolling Wrap each patty in plastic wrap chill 12 hour before using
  6. When ready to roll lightly flour both sides of patty and roll out on lightly floured board
  7. Makes 5 9-inch pie crusts or 20 tart shells
  8. Can be frozen after shaping into round flattened patties
