Swiss Potatoes

Swiss Potatoes

Ingredients

  • 8 medium peeled potatoes
  • 13 cup butter melted
  • 1 Tbsp fresh parsley minced
  • 1 12 tsp salt
  • 14 tsp pepper
  • 1 12 c sharp Cheddar or Swiss cheese
  • 1 c fully cooked ham cubed
  • 1 small onion finely cut
  • 1 tsp garlic powder
  • 3 eggs
  • 12 cup milk
  • Hungarian paprika

Directions

  1. Cook potatoes until very tender
  2. Drain and mash with butter parsley salt and pepper
  3. Spread about 4 cups of the potato mixture onto bottom and sides of a greased 8 inch square baking dish
  4. Combine cheese ham onion and garlic powder
  5. Spoon into potato shells
  6. Combine eggs and milk
  7. Pour over all
  8. Top with remaining potato mixture
  9. Sprinkle with paprika
  10. Bake at 400F for 1 hour
