Tahitian Ham Loaf
Ingredients
- 1 lb ground smoked ham
- 1 lb ground fresh pork
- 23 c coarse cracker crumbs 15 crackers
- 12 c chopped onion
- 12 c milk
- 1 slightly beaten egg
- 1 Tbsp snipped parsley
- dash of pepper
- 8 slices pineapple
- 1 c brown sugar
- 14 c pineapple syrup
- 2 Tbsp vinegar
- 1 tsp prepared mustard
Directions
- Thoroughly combine first 8 ingredients
- Shape mixture into 9 patties
- Be sure patties are no wider than pineapple slices
- In 13 x 9 x 2-inch baking dish line up a row of alternating patties and pineapple slices starting and ending with a patty
- Bake at 325 for 30 minutes
- Combine remaining ingredients for glaze Pour over roll and continue baking 1 hour longer basting every 20 minutes
- Serve with hot rice
- Makes 8 servings
