Tahitian Ham Loaf

Ingredients

  • 1 lb ground smoked ham
  • 1 lb ground fresh pork
  • 23 c coarse cracker crumbs 15 crackers
  • 12 c chopped onion
  • 12 c milk
  • 1 slightly beaten egg
  • 1 Tbsp snipped parsley
  • dash of pepper
  • 8 slices pineapple
  • 1 c brown sugar
  • 14 c pineapple syrup
  • 2 Tbsp vinegar
  • 1 tsp prepared mustard

Directions

  1. Thoroughly combine first 8 ingredients
  2. Shape mixture into 9 patties
  3. Be sure patties are no wider than pineapple slices
  4. In 13 x 9 x 2-inch baking dish line up a row of alternating patties and pineapple slices starting and ending with a patty
  5. Bake at 325 for 30 minutes
  6. Combine remaining ingredients for glaze Pour over roll and continue baking 1 hour longer basting every 20 minutes
  7. Serve with hot rice
  8. Makes 8 servings
