Tangy Tuna Cocktail

Ingredients

  • 1 large can chunk light tuna
  • 2 hard-cooked eggs chopped
  • 14 c chopped dill pickles
  • 12 c sliced radishes
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1 tsp white wine vinegar
  • 14 tsp salt
  • dash of cayenne pepper
  • 2 Tbsp salad oil
  • shredded lettuce
  • chopped parsley and lemon wedges for garnish

Directions

  1. Lightly mix tuna eggs pickles and radishes
  2. In a small bowl blend mustard lemon juice vinegar salt and cayenne Gradually stir in salad oil with a fork until dressing is well blended
  3. Mix dressing lightly with tuna mixture
  4. If you wish cover and chill for 30 minutes to 2 hours to blend flavors
