Tart Lemon Cake Roll

Ingredients

  • 3 eggs
  • 1 c sugar
  • 13 c water
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 34 c all-purpose flour or 1 c cake flour
  • 14 tsp salt
  • powdered sugar

Directions

  1. Heat oven to 375
  2. Line jelly roll pan 15 12 x 10 12 x 1-inch with aluminum foil or waxed paper grease generously Beat eggs in small mixer bowl on high speed until very thick and lemon colored
  3. Pour into large mixer bowl
  4. Beat in sugar gradually
  5. Beat in vanilla and water on low speed
  6. Add flour baking powder and salt gradually beating just until batter is smooth
  7. Pour into pan
  8. Bake 12 to 15 minutes
  9. Immediately loosen cake from edges of pan invert on towel sprinkled generously with powdered sugar
  10. Carefully remove foil
  11. Trim off stiff edges if necessary
  12. Carefully roll hot cake and towel from narrow end
  13. Cool on wire rack at least 30 minutes
