Tender Baked Parsnips

Ingredients
- 1 lb parsnips cooked until tender
- 1 Tbsp lemon juice
- 1 tsp lemon rind
- 12 tsp salt
- 14 tsp black pepper
- 14 tsp ground nutmeg
- 2 Tbsp butter
- 2 Tbsp parsley
Directions
- Drain parsnips when tender
- Mix with remaining ingredients except butter and parsley
- Transfer to an oiled 8 x 8 x 2-inch baking dish
- Dot with the butter
- Bake in a 350 oven for about 20 minutes
- Transfer to a serving dish if desired and sprinkle with the parsley
