Tender Baked Parsnips

Ingredients

  • 1 lb parsnips cooked until tender
  • 1 Tbsp lemon juice
  • 1 tsp lemon rind
  • 12 tsp salt
  • 14 tsp black pepper
  • 14 tsp ground nutmeg
  • 2 Tbsp butter
  • 2 Tbsp parsley

Directions

  1. Drain parsnips when tender
  2. Mix with remaining ingredients except butter and parsley
  3. Transfer to an oiled 8 x 8 x 2-inch baking dish
  4. Dot with the butter
  5. Bake in a 350 oven for about 20 minutes
  6. Transfer to a serving dish if desired and sprinkle with the parsley
