Tenderloin Deluxe

Ingredients

  • 1 whole beef tenderloin 2 to 3 lb
  • 2 Tbsp butter
  • 14 c chopped green onion
  • 2 Tbsp soy sauce
  • 1 tsp Dijon mustard
  • pepper to taste
  • 34 c dry sherry
  • 2 Tbsp butter

Directions

  1. Spread tenderloin with 2 tablespoons butter
  2. Place on rack in shallow uncovered pan at 400 for 20 minutes
  3. Meanwhile in small pan cook onion in second 2 tablespoons butter
  4. Add soy sauce mustard and pepper
  5. Stir in sherry
  6. Heat to boiling then pour over tenderloin and bake another 20 minutes
  7. Pass remaining wine sauce while serving
  8. Serves 4 to 6
