Tenderloin Deluxe
Ingredients
- 1 whole beef tenderloin 2 to 3 lb
- 2 Tbsp butter
- 14 c chopped green onion
- 2 Tbsp soy sauce
- 1 tsp Dijon mustard
- pepper to taste
- 34 c dry sherry
- 2 Tbsp butter
Directions
- Spread tenderloin with 2 tablespoons butter
- Place on rack in shallow uncovered pan at 400 for 20 minutes
- Meanwhile in small pan cook onion in second 2 tablespoons butter
- Add soy sauce mustard and pepper
- Stir in sherry
- Heat to boiling then pour over tenderloin and bake another 20 minutes
- Pass remaining wine sauce while serving
- Serves 4 to 6
