Texas Caviar

Ingredients

  • 2 1 lb cans black-eyed peas
  • 12 c olive oil
  • 14 c wine vinegar
  • 1 clove garlic
  • 14 c thinly sliced onions
  • 12 tsp salt
  • dash of pepper

Directions

  1. Put all ingredients in a covered jar
  2. Let stand in refrigerator 2 to 3 days
  3. Serve small portions on small cup-like pieces of lettuce or large corn chips
