Texas Pecan Cake
Ingredients
- 3 c sugar
- 3 12 sticks butter or margarine
- 7 eggs separated
- 5 c cake flour dredge fruit and nuts in additional 12 c flour
- 2 oz lemon extract
- corn syrup
- 1 tsp baking soda
- 4 Tbsp warm wine or orange juice
- 1 qt chopped pecans
- 12 lb red candied cherries
- 12 lb green candied cherries
- 1 lb candied pineapple
Directions
- Cream sugar butter egg yolks and lemon extract
- Add flour and baking soda mixture
- Mix well
- Fold in fruit and nuts that have been dredged in flour
- Beat egg whites until stiff and fold into batter
