Texas Pecan Cake

Ingredients

  • 3 c sugar
  • 3 12 sticks butter or margarine
  • 7 eggs separated
  • 5 c cake flour dredge fruit and nuts in additional 12 c flour
  • 2 oz lemon extract
  • corn syrup
  • 1 tsp baking soda
  • 4 Tbsp warm wine or orange juice
  • 1 qt chopped pecans
  • 12 lb red candied cherries
  • 12 lb green candied cherries
  • 1 lb candied pineapple

Directions

  1. Cream sugar butter egg yolks and lemon extract
  2. Add flour and baking soda mixture
  3. Mix well
  4. Fold in fruit and nuts that have been dredged in flour
  5. Beat egg whites until stiff and fold into batter
