Texas Pecan Cake

Ingredients

• 1 lb butter or margarine
• 3 c sugar
• 7 eggs separated
• 5 c enriched all-purpose flour
• 1 qt pecan pieces
• 1 tsp baking soda dissolved in 4 Tbsp warm water
• 1 2 oz bottle pure lemon extract
• 1 lb box raisins

Directions

1. Cream butter and sugar well
2. Beat egg yolks well and add to butter and sugar mixture
3. Add a little flour the soda dissolved in water and lemon extract
4. Add a little more flour
