Thai Cucumber Salad

Ingredients
- 2 firm cucumbers
- 1 Tbsp shredded fresh red chili
- 14 c sugar
- 5 Tbsp white vinegar
- chopped onion to taste
- cilantro leaves to taste
Directions
- Trim ends of cucumbers and scrape with fork to make a decorative pattern
- Quarter the cucumbers lengthwise and remove seeds
- Cut them crosswise into thin slices
- Put in bowl and add chili
- In small saucepan combine sugar and vinegar bring to boil
- Cook stirring until the sugar has dissolved
- Cool to room temperature and pour sauce over the cucumber mixture
- Chill and sprinkle with cilantro
- Serves 4
