The Original Berlin Fair Clam Chowder
Ingredients
- 6 clams steamed and ground save the juice from the steaming process
- 4 or 5 medium size potatoes peeled and ground
- 3 medium onions ground
- scant 14 lb salt pork ground
Directions
- Use a coarse grinder for all ingredients
- Cook salt pork and onions just a little
- Add about 2 or 3 cups or more water then the potatoes
- Cook until nearly done
- Add clams and the juice salt pepper and a little sugar about 1 teaspoon
- Simmer about 1 hour uncovered
