The Original Berlin Fair Clam Chowder

Ingredients

  • 6 clams steamed and ground save the juice from the steaming process
  • 4 or 5 medium size potatoes peeled and ground
  • 3 medium onions ground
  • scant 14 lb salt pork ground

Directions

  1. Use a coarse grinder for all ingredients
  2. Cook salt pork and onions just a little
  3. Add about 2 or 3 cups or more water then the potatoes
  4. Cook until nearly done
  5. Add clams and the juice salt pepper and a little sugar about 1 teaspoon
  6. Simmer about 1 hour uncovered
