Three-Grain Pilaf With Dried Apricots And Cherries
Ingredients
- 14 c dried cherries
- 14 c dried apricots diced
- 12 c apple juice
- 12 c chopped onion
- 1 Tbsp butter
- 13 c millet
- 13 c quinoa
- 13 c bulgur wheat
- 3 c vegetable broth
- 12 tsp soy sauce
Directions
- Combine first 2 ingredients and soak in apple juice
- Saute onion in butter over medium-high heat for about 5 minutes or until lightly browned
- Add millet and cook 3 to 4 minutes longer
- Stir in quinoa bulgur and broth bring to a boil
- Drain fruit and add to grains
- Shake in soy sauce
- Cover and bake in a 350 oven for 35 minutes
- Remove from oven and let pilaf sit covered for 5 minutes before serving
- Serves 6 to 8
