Three-Grain Pilaf With Dried Apricots And Cherries

Ingredients

  • 14 c dried cherries
  • 14 c dried apricots diced
  • 12 c apple juice
  • 12 c chopped onion
  • 1 Tbsp butter
  • 13 c millet
  • 13 c quinoa
  • 13 c bulgur wheat
  • 3 c vegetable broth
  • 12 tsp soy sauce

Directions

  1. Combine first 2 ingredients and soak in apple juice
  2. Saute onion in butter over medium-high heat for about 5 minutes or until lightly browned
  3. Add millet and cook 3 to 4 minutes longer
  4. Stir in quinoa bulgur and broth bring to a boil
  5. Drain fruit and add to grains
  6. Shake in soy sauce
  7. Cover and bake in a 350 oven for 35 minutes
  8. Remove from oven and let pilaf sit covered for 5 minutes before serving
  9. Serves 6 to 8
