Tofu Casserole

Ingredients

  • 1 block tofu
  • 3 stalks green onions chopped
  • 1 medium carrot grated
  • 34 c mayonnaise
  • 1 can cream of mushroom soup
  • 3 to 4 shiitake dried mushrooms soaked and chopped
  • 1 can water chestnuts chopped
  • 2 eggs
  • 1 can tuna drained

Directions

  1. Cut tofu into quarters and boil in salted water for 20 minutes
  2. Drain and crumble
  3. Combine with the other ingredients and bake for 40 minutes at 350
