Tofu Casserole

Ingredients
- 1 block tofu
- 3 stalks green onions chopped
- 1 medium carrot grated
- 34 c mayonnaise
- 1 can cream of mushroom soup
- 3 to 4 shiitake dried mushrooms soaked and chopped
- 1 can water chestnuts chopped
- 2 eggs
- 1 can tuna drained
Directions
- Cut tofu into quarters and boil in salted water for 20 minutes
- Drain and crumble
- Combine with the other ingredients and bake for 40 minutes at 350
