Tofu Cheesecake

Ingredients
- 2 lb tofu
- 12 tsp salt
- 14 c lemon juice
- 12 c dried pineapple
- 2 tsp vanilla
- 1 Tbsp cornstarch
- 3 Tbsp water
- 1 12 c granola crumbled
Directions
- Preheat oven to 350
- Prepare crust by crushing granola in blender to make 1 14 cups of crumbs
- Press into a 9-inch pie plate
