Tomato-Pasta Salad
Ingredients
- 1 7 oz pkg macaroni shells
- 2 medium tomatoes chopped about 2 c
- 2 green onions with tops chopped about 2 Tbsp
- 2 cloves garlic finely chopped
- 14 c chopped fresh parsley
- 2 Tbsp olive or vegetable oil
- 12 tsp salt
- 1 12 tsp chopped fresh or 12 tsp dried basil leaves
- 18 tsp coarsely cracked pepper
Directions
- Cook macaroni as directed on package
- Rinse in cold water and drain
- Stir in tomatoes onions garlic parsley oil salt basil and pepper
- Cover and refrigerate about 2 hours or until chilled
- Makes 6 servings
