Tomato-Sausage Scramble

Ingredients

  • 1 8 oz pkg Brown N Serve sausage cut into 14-inch chunks
  • 3 Tbsp butter or margarine
  • 3 Tbsp all-purpose flour
  • 1 c milk
  • 1 c half and half
  • 8 eggs
  • 1 tsp salt
  • dash of pepper
  • 1 small tomato cut into chunks
  • 14 c shredded Cheddar cheese

Directions

  1. Cook sausage as label directs drain any excess fat and keep sausage warm
  2. In oven-safe medium skillet over low heat in hot butter stir in flour until smooth
  3. Gradually stir in milk and cook stirring constantly until thickened
  4. In medium bowl with fork or wire whisk beat half and half eggs salt and pepper until blended stir into sauce
  5. Cook stirring constantly until eggs are slightly set
