Tomato-Sausage Scramble

Ingredients
- 1 8 oz pkg Brown N Serve sausage cut into 14-inch chunks
- 3 Tbsp butter or margarine
- 3 Tbsp all-purpose flour
- 1 c milk
- 1 c half and half
- 8 eggs
- 1 tsp salt
- dash of pepper
- 1 small tomato cut into chunks
- 14 c shredded Cheddar cheese
Directions
- Cook sausage as label directs drain any excess fat and keep sausage warm
- In oven-safe medium skillet over low heat in hot butter stir in flour until smooth
- Gradually stir in milk and cook stirring constantly until thickened
- In medium bowl with fork or wire whisk beat half and half eggs salt and pepper until blended stir into sauce
- Cook stirring constantly until eggs are slightly set
