Tomato Catsup

Ingredients

  • tomatoes enough to make 1 gal when cooked
  • 12 c sugar
  • 1 pt cider vinegar
  • 2 Tbsp ground allspice
  • 3 Tbsp salt
  • 1 Tbsp black pepper
  • 12 Tbsp ground cloves

Directions

  1. Select good firm ripe tomatoes scald and strain through a coarse sieve to remove seed and skin
  2. When cold add to each gallon tomatoes the other ingredients let simmer slowly for 3 hours
  3. Seal in bottles or jars
