Tomato Pie

Ingredients

  • 1 pie shell
  • 3 to 6 ripe peeled tomatoes medium or 3 large
  • 12 tsp salt
  • 14 tsp pepper
  • 12 tsp basil
  • 12 c chopped onion
  • 12 c mayonnaise
  • 2 c grated Cheddar or Swiss cheese

Directions

  1. Bake pie shell at 425 for 5 minutes
  2. Reduce heat to 400 Place tomatoes sliced thick into crust
  3. Add salt pepper basil and onion
  4. Mix mayonnaise and cheese
  5. Spread over top of pie Bake for 35 minutes or until browned
