Tortellini Alfredo Soup

Ingredients

  • 76 oz Stouffers fettucini alfredo sauce thawed
  • 1 12 qt milk
  • 12 c diced onions
  • 12 c diced red bell peppers
  • 2 c julienne carrots
  • 2 c broccoli florets
  • 1 tsp black pepper
  • 2 c Stouffers cheese tortellini in egg pasta
  • 2 c Stouffers cheese tortellini in spinach pasta

Directions

  1. Place fettucini sauce in a heavy stockpot add milk onions red peppers carrots broccoli and black pepper stir well to combine
  2. Heat to 160 or until the vegetables are tender stir frequently
  3. Stir in the tortellini
  4. Hold at 160 for service Garnish with Parmesan cheese
  5. Yield
  6. 20 to 22 8 ounce servings
