Tossed Artichoke Salad

Ingredients

  • 12 c salad oil
  • 13 c vinegar
  • 4 thin slices onion I didnt use these
  • 1 Tbsp sugar
  • 1 clove garlic crushed
  • 14 tsp celery seed
  • 1 9 oz pkg frozen artichoke hearts
  • 1 4 oz can pimentos chopped I used 2 oz
  • torn lettuce or salad greens

Directions

  1. In a saucepan combine oil vinegar 2 tablespoons of water onion sugar garlic 12 teaspoon salt celery seed and dash of pepper
  2. Bring to boiling
  3. Add artichoke hearts
  4. Cook until tender 3 to 5 minutes
  5. Cool
  6. Stir in pimento
  7. Chill
