Tropical Banana-Nut Cake
Ingredients
- 2 12 c sifted cake flour
- 1 23 c sugar
- 1 14 tsp double-acting baking powder
- 1 tsp baking soda
- 1 tsp salt
- 23 c soft shortening
- 1 14 c sieved bananas
- 23 c buttermilk
- 2 large eggs
- 1 tsp vanilla
- 23 c chopped nuts
Directions
- Sift together in large bowl the flour sugar baking powder baking soda and salt
- Add shortening bananas and 13 cup buttermilk stir to dampen flour
- Beat at medium speed 2 minutes with mixer or 300 hand strokes
- Add eggs vanilla and remaining buttermilk
- Beat 2 minutes longer or 300 more strokes
- Fold in chopped nuts
- Pour into 2 paper lined 9 x 1 12-inch round pans Bake at 350 for 30 to 35 minutes
- Cool and frost as desired
