Tropical Banana-Nut Cake

Ingredients

  • 2 12 c sifted cake flour
  • 1 23 c sugar
  • 1 14 tsp double-acting baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 23 c soft shortening
  • 1 14 c sieved bananas
  • 23 c buttermilk
  • 2 large eggs
  • 1 tsp vanilla
  • 23 c chopped nuts

Directions

  1. Sift together in large bowl the flour sugar baking powder baking soda and salt
  2. Add shortening bananas and 13 cup buttermilk stir to dampen flour
  3. Beat at medium speed 2 minutes with mixer or 300 hand strokes
  4. Add eggs vanilla and remaining buttermilk
  5. Beat 2 minutes longer or 300 more strokes
  6. Fold in chopped nuts
  7. Pour into 2 paper lined 9 x 1 12-inch round pans Bake at 350 for 30 to 35 minutes
  8. Cool and frost as desired
