Truffles
Ingredients
- 8 oz bittersweet chocolate
- 4 oz unsalted butter cut into small cubes
- 2 egg yolks
- 2 Tbsp dark rum cognac or orange liqueur
- unsweetened cocoa
Directions
- Melt chocolate in a bowl over hot water
- Remove bowl from hot water and whisk in butter
- Next whisk in egg yolks
- Add rum cognac or liqueur
- Place bowl over cold water and beat vigorously until chocolate is thick and smooth
- Chill until workable
- Form into balls with 2 teaspoons roll in unsweetened cocoa
- Place on a chilled plate until firm
- Roll in cocoa again and keep chilled in a covered container until served
