Tucson Chicken
Ingredients
- 1 Tbsp vegetable oil
- 1 onion julienned
- 1 green pepper julienned
- 12 lb mushrooms halved
- 12 tsp garlic chopped
- 14 c tomato paste
- 2 12 lb chicken breasts dusted with seasoning saltherb mixture store bought
- 2 tsp basil leaves
- 12 c chicken broth
- 2 c tomatoes
Directions
- Saute onions and peppers in vegetable oil
- Add mushrooms garlic and tomato paste
- Coat chicken breasts with seasoning saltherb mixture
- Brown lightly in oil
- Add vegetable mixture and broth
- Cook covered for 30 minutes
- Add tomatoes
- Cover cook for 15 minutes
- Serve over noodles or rice
