Tuna Croquettes

Ingredients

  • 2 cans tuna drained
  • 1 stack pack saltine crackers crushed well
  • 2 cans cream of mushroom soup undiluted
  • 1 egg beaten
  • dash of basil
  • dash of black pepper
  • oil for frying
  • Velveeta cheese
  • cracker meal

Directions

  1. Drain tuna well
  2. Flake in mixing bowl
  3. Add well crushed crackers basil and black pepper
  4. Toss well
  5. Add egg and stir Add soup and mix very well
  6. Cover and refrigerate several hours or overnight
  7. Cube cheese into about 12-inch cubes
  8. Take portion of tuna mixture
  9. Put cheese in center
  10. Form around cheese
  11. Roll in cracker meal
  12. Deep fry in cooking oil until golden brown
  13. Makes 8 to 10 croquettes
