Tuna Potato Casserole

Ingredients

  • 8 medium potatoes peeled and boiled
  • salt and pepper
  • 2 6 oz cans flaked tuna drained
  • 2 eggs
  • 2 c milk
  • 2 Tbsp grated Parmesan cheese
  • 1 Tbsp seasoned fine dry bread crumbs

Directions

  1. Preheat oven at 350
  2. Cut precooked potatoes in 14-inch slices
  3. Arrange half of the potatoes in a greased shallow 2-quart baking dish
  4. Sprinkle lightly with salt and pepper
  5. Cover with tuna then with remaining potato slices
  6. Beat eggs milk and cheese together then pour over potatoes sprinkle with bread crumbs
  7. Bake for 45 minutes or until custard is set and potatoes are golden brown
  8. Makes 6 servings
