Tuna Potato Casserole
Ingredients
- 8 medium potatoes peeled and boiled
- salt and pepper
- 2 6 oz cans flaked tuna drained
- 2 eggs
- 2 c milk
- 2 Tbsp grated Parmesan cheese
- 1 Tbsp seasoned fine dry bread crumbs
Directions
- Preheat oven at 350
- Cut precooked potatoes in 14-inch slices
- Arrange half of the potatoes in a greased shallow 2-quart baking dish
- Sprinkle lightly with salt and pepper
- Cover with tuna then with remaining potato slices
- Beat eggs milk and cheese together then pour over potatoes sprinkle with bread crumbs
- Bake for 45 minutes or until custard is set and potatoes are golden brown
- Makes 6 servings
