Turkey And Mushroom Croquettes

Ingredients

  • 5 Tbsp butter
  • 4 Tbsp flour
  • 12 c strong turkey or chicken stock
  • 12 c milk
  • salt and pepper
  • pinch of mace
  • small pinch of cayenne pepper
  • 1 Tbsp chopped parsley
  • 2 c chopped cooked turkey or chicken
  • 3 to 4 Tbsp chopped mushrooms
  • a little lemon juice
  • 1 egg yolk beaten
  • 12 c seasoned flour
  • 2 eggs beaten with 1 tsp oil
  • 1 to 1 12 c dried white bread crumbs
  • fat for deep frying

Directions

  1. Make thick sauce
  2. Melt 4 tablespoons butter Add 4 tablespoons flour Add stock and milk
  3. Bring to a boil
  4. Cook until thick and smooth Add seasonings and parsley
  5. Let cool
