Turkey Escallopes With Plums

Ingredients

  • 1 lb turkey breasts sliced thinly to 12 to 34-inch
  • 6 oz apple juice
  • 6 Tbsp soy sauce
  • 6 Tbsp dry sherry
  • 1 large clove garlic crushed
  • 2 tsp fresh chopped thyme or 12 tsp dried thyme
  • 1 Tbsp butter
  • 2 Tbsp vegetable oil
  • 34 lb plums washed pitted and halved
  • salt and pepper only if desired but avoid overpowering the marinade

Directions

  1. Pound turkey if necessary between two sheets of waxed paper to uniform thickness
  2. Place in a large bowl
  3. Pour the apple juice soy sauce sherry garlic and thyme over the turkey and mix gently
  4. Cover and refrigerate overnight or for 3 to 4 hours Remove turkey and reserve the marinade
  5. Heat butter and oil in large skillet
  6. Quickly brown turkey on both sides
  7. Be careful not to overcook
  8. Add the plums and reserved marinade
  9. Cover and simmer gently 10 to 15 minutes
  10. Garnish with fresh thyme and dusting of pepper and serve
