Turkey Escallopes With Plums
Ingredients
- 1 lb turkey breasts sliced thinly to 12 to 34-inch
- 6 oz apple juice
- 6 Tbsp soy sauce
- 6 Tbsp dry sherry
- 1 large clove garlic crushed
- 2 tsp fresh chopped thyme or 12 tsp dried thyme
- 1 Tbsp butter
- 2 Tbsp vegetable oil
- 34 lb plums washed pitted and halved
- salt and pepper only if desired but avoid overpowering the marinade
Directions
- Pound turkey if necessary between two sheets of waxed paper to uniform thickness
- Place in a large bowl
- Pour the apple juice soy sauce sherry garlic and thyme over the turkey and mix gently
- Cover and refrigerate overnight or for 3 to 4 hours Remove turkey and reserve the marinade
- Heat butter and oil in large skillet
- Quickly brown turkey on both sides
- Be careful not to overcook
- Add the plums and reserved marinade
- Cover and simmer gently 10 to 15 minutes
- Garnish with fresh thyme and dusting of pepper and serve
