Turkey Scallopini

Ingredients
- 4 4 oz turkey breast cutlets
- 14 tsp ground pepper
- 3 Tbsp freshly grated Parmesan cheese
- 3 Tbsp Italian seasoned bread crumbs
- vegetable cooking spray
- 1 12 tsp olive oil
- 14 c white wine
- 2 Tbsp fresh lemon juice
- 2 Tbsp chopped parsley
Directions
- Place cutlets between unwaxed paper
- Flatten to 18 inch thickness
- Combine pepper cheese and bread crumbs dredge cutlets in mixture
- Coat a nonstick skillet with cooking spray
- Add olive oil
- Place over medium-high heat until hot
- Add cutlets cook 2 minutes on each side or until browned
- Add wine and lemon juice cook 2 minutes or until heated
- Transfer to serving platter sprinkle with parsley
