Turnip Casserole

Ingredients

  • 2 lb turnips peeled and sliced
  • 1 medium onion chopped
  • 2 eggs beaten
  • 1 can cream of mushroom soup
  • 1 12 tsp sugar
  • salt and pepper to taste
  • 12 c cracker crumbs
  • grated Parmesan cheese

Directions

  1. Cook turnips and onion in saucepan in a little water until tender
  2. Drain and mash
  3. Add next four ingredients to turnips and mix well
  4. Spoon mixture into lightly greased 2-quart casserole Sprinkle with cracker crumbs and cheese
  5. Bake 30 minutes at 350
