Tuscan Pot Roast

Ingredients
- 1 top bottom or eye of round roast 5 lb
- 3 Tbsp cooking oil
- 1 c red wine
- 1 c water
- 2 green peppers chopped
- 2 large tomatoes seeded and chopped
- 2 c pitted ripe black olives quartered
- 1 bunch green onions diced
- 2 cloves garlic crushed
- 1 tsp salt
- 2 Tbsp wine vinegar
- 12 c melted butter
Directions
- Brown beef on all sides in oil
- Add wine and water to meat Cover and simmer 2 12 to 3 hours until meat is fork-tender
