Tuscan Pot Roast

Ingredients

  • 1 top bottom or eye of round roast 5 lb
  • 3 Tbsp cooking oil
  • 1 c red wine
  • 1 c water
  • 2 green peppers chopped
  • 2 large tomatoes seeded and chopped
  • 2 c pitted ripe black olives quartered
  • 1 bunch green onions diced
  • 2 cloves garlic crushed
  • 1 tsp salt
  • 2 Tbsp wine vinegar
  • 12 c melted butter

Directions

  1. Brown beef on all sides in oil
  2. Add wine and water to meat Cover and simmer 2 12 to 3 hours until meat is fork-tender
