Twice - Baked Potatoes
Ingredients
- 4 medium potatoes
- 13 c milk
- 2 c shredded Cheddar cheese
- 6 Tbsp butter
- 2 tsp chopped chives
- salt and pepper to taste
Directions
- Preheat oven to 350
- Bake potatoes for 1 hour or until tender
- Cut shallow lengthwise slice from 1 side of potatoes and scoop out pulp reserving shells
- Combine pulp with butter milk chives seasonings and half the cheese
- Beat until light and fluffy
- Spoon pulp into reserved shells
- Sprinkle with remaining cheese
- Bake for 20 minutes
