Twice - Baked Potatoes

Ingredients

  • 4 medium potatoes
  • 13 c milk
  • 2 c shredded Cheddar cheese
  • 6 Tbsp butter
  • 2 tsp chopped chives
  • salt and pepper to taste

Directions

  1. Preheat oven to 350
  2. Bake potatoes for 1 hour or until tender
  3. Cut shallow lengthwise slice from 1 side of potatoes and scoop out pulp reserving shells
  4. Combine pulp with butter milk chives seasonings and half the cheese
  5. Beat until light and fluffy
  6. Spoon pulp into reserved shells
  7. Sprinkle with remaining cheese
  8. Bake for 20 minutes
