Twice Baked Potatoes

Ingredients

  • 4 baking potatoes
  • 4 Tbsp butter
  • 4 Tbsp whipping cream
  • dash of salt
  • dash of pepper
  • 34 c shredded Cheddar cheese
  • 2 eggs

Directions

  1. Bake potatoes at 375 for about 1 hour or until soft
  2. Cut a thin slice off the top of each potato
  3. Scoop out the pulp and put into a bowl
  4. Separate eggs add yolks to the potato pulp
  5. Blend until smooth
  6. Add butter and cream
  7. Season with salt and pepper Beat egg whites until stiff peaks form
  8. Fold into potato mixture
  9. Fill shells with mixture
  10. Sprinkle with cheese
  11. Bake in oven at 375 for about 15 minutes or until heated through
